Pumpkin and Potato Salad
By Yoko Yanamoto (Japan)
This recipe is one of my favorites. I often make potato salad. Because it's delicious and healthy and easy to make. You only have to mix mash potato and pumpkin with vegetables or fruit or anything you like. I recommend you to put many vegetables into salad. You can take the full of nutriment from this salad. I hope you'll try this recipe.
(serves 4 persons)
A: 3 potatoes and 1/2 carrot, chop, boil together and drain
1/4 of an pumpkin, peel, boil, and drain
1 boiled egg
Combine A in a large glass bowl, mash them, add mayonnaise, sprinkle in some salt and pepper. While you're boiling potato, carrot, pumpkin and an egg, you better prepare B.
B: 1 cucumber, slice
1/4 of an onion, slice, put into water to decrease their sharp taste for a while, and then drain
some chopped ham
Combine B into a small bowl, add mayonnaise and pepper a little, toss lightly.
